- Preheat your oven to 400°F (200°C). Core and slice the apples into thin wedges, toss with cinnamon and nutmeg, spread on a baking sheet, and roast for about 15 minutes.
- Combine softened butter with finely chopped herbs in a small bowl to create herb butter and set aside.
- Spread herb butter on one side of each slice of bread. On unbuttered sides, layer cheese, roasted apples, and candied bacon followed by another slice of cheese and the other piece of bread, buttered side out.
- Heat a non-stick skillet over medium-low heat, place sandwich in the pan, and cook for 4-5 minutes on each side, pressing down gently until golden brown and cheese is melted.
- Remove the sandwich, let it cool for a minute, cut in half, and drizzle additional hot honey before serving.
