Ingredients
  

Dough
  • 2 cups All-Purpose Flour Substitute with gluten-free flour if needed.
  • 1 tablespoon Sugar Agave syrup is a good substitute.
  • 2 teaspoons Yeast Can use instant or active dry yeast.
  • 1 cup Warm Water Ensure it's around 110°F (43°C).
  • 1 teaspoon Salt Kosher or sea salt is ideal.
  • 2 tablespoons Olive Oil Melted coconut oil or vegan butter can be used.
Filling
  • 2 medium Onion Shallots can be used for a milder flavor.
  • 2 cups Fresh Spinach Preferred for the best flavor.
  • 2 cloves Garlic Fresh garlic is best.
  • 2 tablespoons Nutritional Yeast Optional but highly recommended.
Assembly
  • 1 cup Marinara Sauce Ensure it's thick to prevent sogginess.

Method
 

Preparing the Rolls
  1. In a mixing bowl, combine 1 cup of warm water (around 110°F or 43°C) with 1 tablespoon of sugar and 2 teaspoons of yeast. Allow this mixture to sit for about 5–10 minutes until frothy.
  2. Stir in 2 cups of all-purpose flour, 1 teaspoon of salt, and 2 tablespoons of olive oil, mixing until a soft dough forms.
  3. Turn the dough onto a lightly floured surface and knead for 5–7 minutes until it becomes smooth and elastic.
  4. Shape the dough into a ball, place in a greased bowl, cover with a damp cloth and let rise for 1 hour.
  5. Heat 1 tablespoon of olive oil in a skillet, sauté 2 sliced onions for 15–20 minutes until caramelized.
  6. Add 2 minced garlic cloves and 2 cups of fresh spinach, cooking until the spinach has wilted, about 2–3 minutes.
  7. Stir in 2 tablespoons of nutritional yeast, set aside to cool.
  8. Once the dough has risen, roll it out into a rectangular shape, about 1/4 inch thick. Spread marinara sauce over the dough.
  9. Distribute the filling evenly over the marinara, roll tightly and slice into 12 sections.
  10. Preheat your oven to 375°F (190°C), place rolls in a greased baking dish, cover and let rise for 30 minutes.
  11. Bake in the preheated oven for 25–30 minutes until golden brown.
