- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine almond milk, flaxseed meal, maple syrup, cinnamon, nutmeg, and vanilla extract. Whisk until well blended and smooth.
- Cut the bread into bite-sized cubes and place them in a greased 9x13 inch baking dish.
- Pour the custard mixture over the bread cubes and press down gently to ensure they are soaked. Let it sit for about 10 minutes.
- Gently fold in the blueberries, distributing them evenly.
- Bake for 30-35 minutes until the top is golden brown and the custard is set.
