  • 6 slices crusty bread or challah
  • 2 cups blueberries fresh or frozen
  • 2 cups almond milk soy or oat milk are great substitutes
  • 1/4 cup flaxseed meal can substitute with chia seeds
  • 1/4 cup maple syrup agave syrup can be used for lower glycemic
  • 1 teaspoon cinnamon nutmeg can be substituted
  • 1/4 teaspoon nutmeg optional
  • 1 teaspoon vanilla extract almond extract can be used
  • 1 tablespoon coconut oil for greasing the pan; olive oil can be used
Optional Topping
  • 1 cup powdered sugar for dusting
  • 1/2 cup crumble topping optional nuts or seeds for crunch

Method
 

Casserole Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine almond milk, flaxseed meal, maple syrup, cinnamon, nutmeg, and vanilla extract. Whisk until well blended and smooth.
  3. Cut the bread into bite-sized cubes and place them in a greased 9x13 inch baking dish.
  4. Pour the custard mixture over the bread cubes and press down gently to ensure they are soaked. Let it sit for about 10 minutes.
  5. Gently fold in the blueberries, distributing them evenly.
  6. Bake for 30-35 minutes until the top is golden brown and the custard is set.
  7. Allow it to cool for about 10 minutes before serving. Dust with powdered sugar if desired.
