- Combine butter, garlic, minced rosemary, and thyme in a bowl. Stir in truffle oil.
- Stuff hens with lemon quarters and rub herb butter mixture on the exterior.
- Place hens on the vegetables, pour chicken stock and white wine around them, and roast.
- Roast for 55-65 minutes, checking doneness with a meat thermometer.
