Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Rinse the Cornish hens under cold water, pat dry, tuck wings, and tie drumsticks.
  3. In the roasting pan, arrange quartered onions, carrots, and halved potatoes; drizzle with oil, and toss.
  4. Combine butter, garlic, minced rosemary, and thyme in a bowl. Stir in truffle oil.
  5. Stuff hens with lemon quarters and rub herb butter mixture on the exterior.
  6. Place hens on the vegetables, pour chicken stock and white wine around them, and roast.
  7. Roast for 55-65 minutes, checking doneness with a meat thermometer.
  8. Remove from oven and let rest for 10-20 minutes before serving.
