Method
 

Cucumber Sandwich
  1. Peel and thinly slice the English cucumber into even rounds, about 1/8 inch thick. Spread unsalted butter on one side of each slice of white sandwich bread. Layer the cucumber slices on one buttered slice, then press the other slice on top. Trim the crusts to create neat edges.
  2. Cut the sandwich into finger shapes or triangles. Arrange on a serving platter artfully.
Smoked Salmon Sandwich
  1. Spread cream cheese on two slices of whole wheat or rye bread. Layer smoked salmon over one slice, then place the second slice on top. Trim the crusts.
  2. Cut the sandwich into triangles or squares. Arrange on the same platter as the cucumber sandwiches.
Roast Beef Sandwich
  1. Spread unsalted butter on one slice of white bread and wholegrain mustard on the other. Layer thinly sliced roast beef on the buttered slice, then press the mustard slice down gently. Trim off the crusts.
