  • 2 teaspoons tomato paste
  • 2 quarts beef stock use vegetable stock or mushroom broth for vegetarian
  • 2 sprigs fresh thyme
For the Dumplings
  • 1 cup flour substitute with almond flour or gluten-free blend
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1/3 cup milk

Step-by-Step Instructions
  1. Cut the beef into bite-sized pieces, season with salt, pepper, and garlic powder. Coat with flour.
  2. In a pot, heat butter or oil. Sear the beef until browned, then remove and set aside.
  3. Sauté onion for 3-4 minutes, then add carrots and potatoes. Cook for 5 minutes.
  4. Mix in browned beef, garlic, tomato paste, and rosemary. Add beef stock and thyme, simmer for 2 hours.
  5. In a bowl, mix flour, baking powder, and salt. Add milk and butter to form a sticky batter.
  6. After 2 hours, remove thyme sprigs and dollop batter over stew. Steam for 20 minutes or bake at 350°F.
  7. Serve in bowls, garnished with parsley.
