For the Chicken Filling
  • 1 lb Chicken Breast or rotisserie chicken
  • 1/2 cup Sweet Chili Sauce add sriracha for more spice
For the Wraps
  • 4 pieces Tortillas whole wheat or gluten-free options
For the Crunch
  • 1 cup Cucumber sliced
  • 1 cup Bell Peppers any variety
  • 1 cup Carrots sliced or shredded
Optional Extras
  • 1/2 cup Cheese your favorite type
  • 1 piece Avocado sliced
  • 1/4 cup Herbs fresh cilantro or basil

Method
 

Cooking Instructions
  1. Season the chicken breast lightly with salt and pepper. Heat oil in a skillet over medium heat. Cook chicken for 6-7 minutes on each side until golden brown and reaches 165°F. Let rest for 5 minutes.
  2. Slice the chicken into thin strips. Toss with sweet chili sauce until evenly coated.
  3. Slice cucumber, bell peppers, and carrots into thin strips. Set aside.
  4. Warm tortillas in a dry pan or microwave for 10-15 seconds until pliable.
  5. Layer chicken filling and sliced veggies on each tortilla. Add optional extras if desired.
  6. Fold in the sides of the tortilla and roll tightly from the bottom. Cut diagonally to serve.
  7. Serve fresh, alongside fruit or salad.
