  2. Heat a skillet over medium heat and add 1 tablespoon butter until melted. Crack in 2 large eggs and cook to preferred doneness, about 3-4 minutes for sunny-side up.
  3. Split 2 English muffins in half and toast until warm and golden brown, about 3-4 minutes.
  4. Spread a tablespoon of chipotle mayo on each toasted muffin half. Layer slices of cheddar cheese and the cooked eggs. Add bacon or sausage if desired, then mashed avocado and baby spinach.
