Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Cut the chicken breasts into bite-sized pieces and place them in a mixing bowl. Drizzle with olive oil and toss with garlic powder, onion powder, paprika, salt, and pepper.
  3. Spread the chicken on a parchment-lined baking sheet and bake for 15–20 minutes, until no longer pink inside.
  4. While the chicken bakes, warm the buffalo sauce in a saucepan over medium heat.
  5. Once the chicken is cooked, pour the warmed buffalo sauce over it and toss to coat.
  6. Assemble the bowls starting with a layer of cooked rice, then add the buffalo chicken and top with corn, black beans, cheddar cheese, and green onions.
  7. Slice the avocado and arrange on top, then drizzle with ranch or blue cheese dressing.
  8. Garnish with cilantro if desired and serve warm.
