Burger Preparation
- In a large bowl, combine ground chuck, shredded smoked cheddar, diced jalapeños, and BBQ rub.
- Divide the mixture into equal portions and form them into patties about ¾-inch thick.
- Preheat your smoker to 225°F using hickory wood chunks.
- Once the smoker is stable, place the patties on the grill rack.
- Smoke the patties for 60-75 minutes, or until they reach an internal temperature of 160°F.
- Prepare the bacon sauce by mixing mayonnaise, ketchup, mustard, Worcestershire sauce, sweet relish, and minced bacon.
- In the last 5 minutes of smoking, add slices of pepper jack cheese on top of each patty.
- Assemble the burgers with a smoked patty, crispy bacon sauce, and other desired toppings.
