- Preheat a cast-iron skillet or griddle over medium-high heat for 3–4 minutes.
- Press a quarter of the ground beef onto one side of each tortilla and season with salt, pepper, and garlic powder.
- Cook the tortilla beef-side down in the hot skillet for 2-3 minutes, until browned.
- Flip the tortilla, add a generous amount of shredded cheese on top, fold in half, and grill for 1-2 minutes per side.
- Remove from skillet, let rest for a minute, slice, and serve hot with your favorite toppings.
