Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground turkey, soaked fresh breadcrumbs, minced onion, garlic, chopped fresh sage, Italian seasoning, egg, egg yolk, and grated parmesan cheese. Mix gently until just combined.
  2. Shape the turkey mixture into evenly sized meatballs, about 1.5 inches in diameter. Arrange them on a plate as you go.
  3. Heat a large skillet over medium heat and add a drizzle of oil. Once shimmering, carefully add the formed meatballs and sear for about 5-7 minutes until golden brown on all sides.
  4. In a separate saucepan, combine the canned pumpkin puree, heavy cream, additional chopped sage, and more parmesan cheese. Stir over low heat for about 5 minutes until heated through.
  5. Transfer the cooked meatballs into the saucepan with the pumpkin sage sauce and let them simmer for about 5 minutes.
  6. Serve the turkey meatballs in pumpkin sage sauce over pasta, mashed potatoes, or on their own, garnished with fresh sage or parmesan if desired.
