  • 1 large Sweet Potato peeled and diced
  • 1 tablespoon Avocado Oil or olive oil
  • 2 links Chicken Sausage or turkey/veggie sausage
  • 2 large Eggs or egg whites/tofu scramble
  • 1 medium Avocado sliced
For the Seasonings
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Paprika optional
  • 1 tablespoon Hot Honey or hot sauce
  • to taste Chili Flakes or everything bagel seasoning
Optional Toppings
  • 1/2 cup Cottage Cheese or Greek yogurt/ricotta
  • 1/2 cup Bell Pepper sautéed
  • 2 tablespoons Hemp Hearts
  • 2 tablespoons Pumpkin Seeds
  • 1 tablespoon Almond Butter or Maple Syrup
  • 1/2 cup Black Beans

Method
 

Preparation Steps
  1. Peel and dice the sweet potato into small cubes, coat with avocado oil, sea salt, black pepper, and paprika, then air fry at 400°F for 15-18 minutes until golden.
  2. Slice the chicken sausage and cook in a skillet over medium heat for 5-7 minutes until browned.
  3. Whisk together the eggs and scramble in a skillet over medium-low heat for 3-5 minutes until fluffy.
  4. Assemble the bowl by layering the crispy sweet potatoes, chicken sausage, and scrambled eggs, topped with cottage cheese and avocado.
  5. Drizzle with hot honey and sprinkle optional seasonings and toppings before serving.
