Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine 1 ½ cups of all-purpose flour and a pinch of salt. Cut in ½ cup of cold unsalted butter until crumbly, then gradually add ice water.
  3. Roll out the chilled dough to about ¼-inch thickness and cut into circles for tartlet molds.
  4. Slice 8 ounces of Brie cheese and 1-2 pears into thin wedges. Tear 4 ounces of prosciutto into pieces.
  5. Layer the tarts starting with prosciutto, then Brie cheese, followed by pear slices.
  6. Sprinkle fresh thyme leaves on top and optionally drizzle with honey.
  7. Bake for 15-20 minutes until golden brown and cheese is bubbly.
  8. Let cool for 5 minutes, garnish with arugula, and serve.
