For the Spicy Mayo Dip
  • 1 cup Mayonnaise Greek yogurt can be a lighter alternative.
  • 2 tbsp Sriracha Adjust to your spice preference.

  • 1 tbsp Sesame Seeds For a nutty finish.
  • 1 stalk Extra Green Onions Chop for garnish.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground beef, breadcrumbs, egg, finely chopped green onions, minced garlic, freshly grated ginger, soy sauce, sesame oil, and gochujang. Mix until just combined.
  2. Roll the meat mixture into 1 to 1.5 inch balls and place on a baking sheet lined with parchment paper.
  3. Heat a tablespoon of oil in a large skillet over medium-high heat. Sear the meatballs until golden brown, about 3-4 minutes per side.
  4. Mix together soy sauce, brown sugar, rice vinegar, and additional gochujang to prepare the glaze.
  5. Preheat oven to 375°F (190°C). Transfer meatballs to a baking dish, drizzle with glaze, and bake for 15-20 minutes.
  6. Combine mayonnaise and sriracha in a small bowl to prepare the spicy mayo dip, adjusting sriracha to taste.
  7. Garnish baked meatballs with sesame seeds and chopped green onions and serve with the spicy mayo dip.
