Steps for Preparation
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add 1 pound of lean ground beef and 1 diced onion. Cook for 5-7 minutes until browned and onions are translucent. Remove from skillet.
- In the same skillet, add 1 teaspoon of grated garlic, 2 teaspoons of chili powder, 1 teaspoon of ground cumin, and season with kosher salt and black pepper. Stir for 1 minute to bloom spices.
- Add 2 cups of diced sweet potatoes, a 14.5-ounce can of fire-roasted diced tomatoes, 4 ounces of diced green chiles, and 1/4 cup of water. Sprinkle remaining chili powder and cumin. Stir, cover, and simmer for 20 minutes until sweet potatoes are tender.
- Return ground beef mixture to the skillet, fold in with sweet potatoes. Sprinkle 1/2 cup of shredded cheddar cheese on top, cover for 1-2 minutes to melt cheese.
- Remove from heat, garnish with cilantro if desired. Serve warm for a cozy meal.
