Ingredients
  

For the Skillet
  • 2 tablespoons Olive Oil Avocado oil can be a substitute.
  • 1 large Diced Onion Yellow or white onions work beautifully.
  • 1 lb Lean Ground Beef Ground turkey can be used instead.
  • 5 teaspoons Chili Powder Divided; adjust as needed for heat.
  • 2 teaspoons Ground Cumin Coriander can be an alternative.
  • Kosher Salt To taste.
  • Fresh Ground Black Pepper To taste.
  • 1 teaspoon Grated Garlic Fresh garlic is preferred.
  • 2 cups Sweet Potatoes Peeled and diced.
  • 14.5 oz Fire Roasted Diced Tomatoes Can substitute regular diced tomatoes.
  • 4 oz Canned Diced Green Chiles Fresh jalapeños can be used for more heat.
  • 1/4 cup Water Beef broth can enhance flavor.
  • 1/2 cup Shredded Cheddar Cheese Dairy-free cheese can be used.
  • Cilantro Optional, for garnish.

Method
 

Steps for Preparation
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add 1 pound of lean ground beef and 1 diced onion. Cook for 5-7 minutes until browned and onions are translucent. Remove from skillet.
  2. In the same skillet, add 1 teaspoon of grated garlic, 2 teaspoons of chili powder, 1 teaspoon of ground cumin, and season with kosher salt and black pepper. Stir for 1 minute to bloom spices.
  3. Add 2 cups of diced sweet potatoes, a 14.5-ounce can of fire-roasted diced tomatoes, 4 ounces of diced green chiles, and 1/4 cup of water. Sprinkle remaining chili powder and cumin. Stir, cover, and simmer for 20 minutes until sweet potatoes are tender.
  4. Return ground beef mixture to the skillet, fold in with sweet potatoes. Sprinkle 1/2 cup of shredded cheddar cheese on top, cover for 1-2 minutes to melt cheese.
  5. Remove from heat, garnish with cilantro if desired. Serve warm for a cozy meal.
