For the Meatballs
  • 1 pound Ground Turkey 93% lean is ideal
  • 0.5 cup Panko Breadcrumbs Substitute with classic breadcrumbs if needed
  • 0.25 cup Red Onion Finely chopped
  • 0.5 cup Feta Cheese Crumble fresh feta
  • 2-3 cloves Garlic Minced
  • 1 Egg Beaten
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Dill
  • 1 teaspoon Cumin
  • to taste Salt & Black Pepper Seasoning
For the Tzatziki Sauce
  • 1 cup Plain Greek Yogurt Full-fat preferred
  • 1-2 units Persian Cucumbers Grated, excess water squeezed out
  • a handful Fresh Dill Or dried dill as a substitute
  • 2 cloves Garlic Minced
  • 0.5 units Lemon Juice Juice of half a lemon
  • 2 tablespoons Olive Oil Omit for a lighter sauce
  • to taste Salt & Cracked Black Pepper Seasoning

Method
 

Step-by-Step Instructions
  1. Grate 1-2 Persian cucumbers and squeeze out excess moisture. Combine with Greek yogurt, minced garlic, fresh dill, lemon juice, olive oil, and salt and pepper. Mix and refrigerate.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. In a bowl, mix ground turkey, panko breadcrumbs, red onion, feta cheese, minced garlic, beaten egg, oregano, dill, cumin, salt, and pepper gently until just combined.
  4. Scoop about 2 tablespoons of mixture and roll into 1-inch balls. Place on baking sheet, leaving space between meatballs.
  5. Bake for 15-20 minutes or until cooked through and internal temperature reaches 165°F (74°C).
  6. Remove from oven, cool slightly, and serve hot with tzatziki sauce and lemon wedges.
