Ingredients
  

For the Beef
  • 2 pounds Beef Chuck or brisket can be substituted
  • 4 cups Beef Broth low-sodium options recommended
For the Aromatics
  • 2 tablespoons Olive Oil can substitute with vegetable oil
  • 1 piece Onion finely chopped
  • 3 cloves Garlic minced
For the Sauce
  • 2 tablespoons Tomato Paste can use crushed tomatoes for texture
  • 1 can Diced Tomatoes 14.5 oz
For the Spices
  • 1 tablespoon Ground Cumin freshly ground elevates the dish
  • 1 teaspoon Ground Coriander
  • 0.5 teaspoon Ground Cinnamon a little goes a long way
  • 1 tablespoon Paprika try smoked paprika for a twist
  • 1 teaspoon Black Pepper adjust to fit your preference
  • 1 teaspoon Salt add gradually to taste
For the Vegetables
  • 1 piece Green Bell Pepper chopped
  • 2 pieces Carrots sliced
  • 1 bunch Fresh Parsley for garnish

Method
 

Main Instructions
  1. Heat the oil in a large, heavy pot over medium-high heat.
  2. Brown the beef in the pot for 5-7 minutes until nicely browned.
  3. Sauté onions for 3-4 minutes until translucent, then add garlic and cook for another minute.
  4. Add tomato paste, cumin, coriander, cinnamon, and paprika, cooking for 1-2 minutes.
  5. Return the browned beef to the pot, mixing with the spice mixture.
  6. Pour in beef broth and diced tomatoes, bring to a boil, then reduce heat and simmer for 45 minutes.
  7. Add chopped green bell pepper and sliced carrots, continuing to simmer for another 15 minutes.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Garnish with freshly chopped parsley before serving.
