  • 1 medium Onion Caramelized, or substitute with shallots.
  • 2 tablespoons Herbs Fresh thyme or chives, or dried herbs.
  • to taste Seasonings Blend of salt and pepper, optional spices like smoked paprika.
Optional Glaze
  • 1 large Egg Wash or Milk For brushing the tops.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface to about ¼ inch thick. Cut into 4x6 inch rectangles.
  3. In a mixing bowl, combine whisked eggs, cheese, crumbled bacon, caramelized onions, herbs, and seasonings. Stir until well incorporated.
  4. Take one pastry rectangle and spoon filling onto one half, leaving a ½-inch border. Fold the other half over and press down to secure.
  5. Crimp the edges of the pastry with a fork to seal in the filling.
  6. Brush the tops with an egg wash made from whisked egg and a splash of milk.
  7. Bake for 18-22 minutes until puffed and golden brown. Allow to cool on a wire rack.
