- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface to about ¼ inch thick. Cut into 4x6 inch rectangles.
- In a mixing bowl, combine whisked eggs, cheese, crumbled bacon, caramelized onions, herbs, and seasonings. Stir until well incorporated.
- Take one pastry rectangle and spoon filling onto one half, leaving a ½-inch border. Fold the other half over and press down to secure.
- Crimp the edges of the pastry with a fork to seal in the filling.
- Brush the tops with an egg wash made from whisked egg and a splash of milk.
- Bake for 18-22 minutes until puffed and golden brown. Allow to cool on a wire rack.
