  • 1 piece Red Onion or shallots
  • 1-2 pieces Honeycrisp Apples, sliced or other firm sweet apples
For the Sauce
  • 4 tbsp Salted Butter or unsalted butter
  • 3/4 cup Apple Cider or apple juice
  • 1/2 cup Chicken Broth or white wine
  • 2 tbsp Dijon Mustard or yellow mustard
  • 3 cloves Garlic, minced for flavor
For Cooking
  • Olive Oil for frying
  • Salt to taste
  • Pepper to taste

Method
 

Step-by-Step Instructions
  1. Season the chicken thighs with salt, pepper, onion powder, garlic powder, smoked paprika, thyme, and rosemary. Let sit for 15 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken skin-side down for 5-7 minutes until golden brown. Flip and sear the other side for 5 minutes.
  3. Remove chicken and add red onions and apples to the skillet. Sauté for 3-4 minutes until softened.
  4. Stir in minced garlic and sauté for 30 seconds. Add apple cider and chicken broth, then return chicken to the skillet.
  5. Preheat oven to 375°F (190°C) and roast chicken for 20-25 minutes until cooked to 165°F (74°C).
  6. Remove chicken and reduce sauce in skillet for thicker consistency if desired. Serve hot.
