- Season the chicken thighs with salt, pepper, onion powder, garlic powder, smoked paprika, thyme, and rosemary. Let sit for 15 minutes.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken skin-side down for 5-7 minutes until golden brown. Flip and sear the other side for 5 minutes.
- Remove chicken and add red onions and apples to the skillet. Sauté for 3-4 minutes until softened.
- Stir in minced garlic and sauté for 30 seconds. Add apple cider and chicken broth, then return chicken to the skillet.
- Preheat oven to 375°F (190°C) and roast chicken for 20-25 minutes until cooked to 165°F (74°C).
