Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and prepare a large sheet pan lined with parchment paper.
  2. Roast diced bell peppers, onions, and yellow potatoes drizzled with olive oil for about 20 minutes until tender.
  3. Add lean ground meat and seasonings on top of the roasted veggies and return to the oven for an additional 15 minutes.
  4. Whisk together eggs and cottage cheese until smooth in a large bowl.
  5. Pour the egg and cottage cheese mixture over the cooked meat and roasted vegetables, then top with shredded cheese.
  6. Bake for 10-15 minutes or until the eggs are set and cheese is melted.
  7. Cool for 5 minutes and slice into squares.
  8. Wrap filling in tortillas, adding desired toppings, then secure and wrap each burrito individually.
