  • 1 piece ripe avocado diced
  • ¼ cup red onions thinly sliced

  • ½ cup Gorgonzola cheese crumbled
  • 1 cup walnuts candied or toasted
For the Vinaigrette Dressing
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard

Preparation
  1. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper for the vinaigrette.
  2. In a large mixing bowl, combine arugula, sliced pears, diced avocado, and red onions.
  3. Preheat oven to 350°F (175°C). Spread walnuts on a baking sheet and drizzle with sugar. Bake for 8-10 minutes, stirring halfway.
  4. Crumble Gorgonzola cheese over the salad mixture. Gently toss to combine.
  5. Drizzle vinaigrette over the salad, tossing gently. Adjust seasoning with salt and pepper.
  6. Serve immediately, garnished with extra walnuts and cheese if desired.
