- Preheat the oven to 325°F (160°C) and prepare a baking tray with mini cupcake liners.
- In a mixing bowl, combine softened cream cheese and sugar and blend until smooth.
- Add vanilla extract and sour cream to the mixture and blend until fully combined.
- Add eggs one at a time, mixing gently after each addition until just combined.
- In a separate bowl, mix crushed graham crackers with melted butter until evenly coated.
- Spoon the crust mixture into each cupcake liner and fill with cheesecake batter.
- Bake for approximately 20 minutes until slightly jiggly in the center; cool in the pan.
- Chill the cheesecakes at room temperature for 30 minutes then in the fridge for at least 2 hours.
- Before serving, sprinkle red and green sprinkles on top.
