Preparation
- Finely chop the mushrooms and beef tenderloin. Mix with Dijon mustard until well combined.
- Roll out cold puff pastry on a floured surface to about 1/8 inch thickness. Cut into 4x4 inch squares.
- Place a spoonful of filling in the center of each square, fold corners over sealing tightly.
- Arrange assembled bites on a baking sheet and refrigerate for at least 30 minutes.
- Preheat the oven to 400°F (200°C). Brush bites with egg wash or milk. Bake for 15 minutes until golden brown.
- Allow to cool slightly before serving on a platter, garnished with fresh herbs.
