  • 8 ounces Mushrooms Chopped finely for a smooth filling.
  • 2 tablespoons Dijon Mustard Optional for milder flavors.
Pastry
  • 1 package Puff Pastry Use cold, gluten-free versions if necessary.
Finish
  • 1 egg Egg Wash Optional, can substitute with milk.

Method
 

Preparation
  1. Finely chop the mushrooms and beef tenderloin. Mix with Dijon mustard until well combined.
  2. Roll out cold puff pastry on a floured surface to about 1/8 inch thickness. Cut into 4x4 inch squares.
  3. Place a spoonful of filling in the center of each square, fold corners over sealing tightly.
  4. Arrange assembled bites on a baking sheet and refrigerate for at least 30 minutes.
  5. Preheat the oven to 400°F (200°C). Brush bites with egg wash or milk. Bake for 15 minutes until golden brown.
  6. Allow to cool slightly before serving on a platter, garnished with fresh herbs.
