- Preheat your oven to 350°F (175°C). Gather your ingredients.
- Melt 4 tablespoons of butter in a medium saucepan over medium heat. Whisk in 1/4 cup of flour for about 2 minutes. Gradually add in 3 cups of whole milk while whisking until thickened.
- In a large baking dish, layer half of the day-old brioche slices, add 8 ounces of turkey ham, then 1 cup of Gruyère cheese. Pour half of the béchamel sauce over the layers.
- Repeat the layers with the remaining brioche, turkey ham, and Gruyère cheese. Pour the rest of the béchamel sauce over the top.
- In a bowl, whisk together 4 eggs and 1/2 cup of heavy cream. Pour this mixture evenly over the casserole.
- Bake for 25-30 minutes until the casserole is bubbling and golden-brown.
- Let it cool for a few minutes, then serve warm, with optional eggs on top.
