Step-by-Step Instructions
  1. In a large mixing bowl, combine all-purpose flour and granulated sugar. Cut in chilled unsalted butter until mixture resembles coarse crumbs. Gradually add ice water to form a dough.
  2. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Roll out the chilled dough on a floured surface to about 1/8 inch thick.
  4. Use a round cutter to cut out circles from the rolled dough, about 4-5 inches in diameter.
  5. Take half of the dough circles, place a spoonful of strawberry jam in each, fold over, and seal the edges with a fork.
  6. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  7. Prepare an egg wash by beating an egg and brushing it over the tops of the pastries.
  8. Bake the hand pies for 20-25 minutes until golden brown.
  9. Allow the hand pies to cool on a wire rack for about 10 minutes before serving.
