  • 1 cup Breadcrumbs or crushed crackers or gluten-free breadcrumbs
  • 1 Egg for a vegan option, try flaxseed mixed with water
  • 1/2 cup Milk use vegetable broth for a dairy-free substitute

For the Macaroni Cheese Layer
  • 8 ounces Elbow Macaroni or any pasta shape you like
  • 2 tablespoons Butter or olive oil for a dairy-free alternative
  • 2 tablespoons Flour opt for gluten-free flour blends if desired
  • 2 cups Cheddar Cheese mix with mozzarella or gouda for varied tastes
  • 1 teaspoon Paprika optional but highly recommended
  • 1 tablespoon Dry Mustard use Dijon mustard for a different twist

Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C). Grease your baking dish.
  2. In a large mixing bowl, combine ground beef, onion, breadcrumbs, egg, milk, salt, and pepper.
  3. Transfer the meatloaf mixture into the greased baking dish, pressing it evenly.
  4. Bake in the preheated oven for 20 minutes.
  5. Cook the macaroni in boiling salted water until al dente, about 6-8 minutes. Drain and set aside.
  6. In a medium saucepan, melt the butter, then stir in the flour and cook for about a minute.
  7. Gradually whisk in milk until the sauce thickens and becomes creamy, about 3-5 minutes.
  8. Remove from heat and stir in cheddar cheese, paprika, and dry mustard until smooth.
  9. Fold the cooked macaroni into the cheese sauce until fully coated.
  10. Pour the macaroni and cheese mixture over the partially baked meatloaf.
  11. Return to the oven and bake for an additional 25 minutes until bubbly and golden.
  12. Let the casserole rest for about 10 minutes before serving.
