Step-by-Step Instructions for Lemon Rolls
  1. Preheat your oven to 200°F (95°C). Gather your ingredients and equipment.
  2. In a large mixing bowl, combine flour, yeast, poppy seeds, and salt. Whisk together.
  3. In a separate bowl, combine buttermilk, sugar, and butter. Heat in the microwave until warm.
  4. Pour the warmed buttermilk mixture into the dry ingredients and mix until sticky dough forms.
  5. Add eggs one at a time, then fold in lemon zest until well combined.
  6. Adjust dough consistency with additional flour if needed, until tacky and elastic.
  7. Cover the bowl and let the dough rest for 10–20 minutes in a warm place.
  8. Prepare the filling by combining granulated sugar, brown sugar, and lemon zest with softened butter.
  9. Roll the dough into a 12x18 inch rectangle, spread the lemon filling, and roll tightly.
  10. Slice the log into 12 pieces using dental floss and place cut-side up in a greased pan.
