Preparation Steps
- Preheat your oven to 350°F (175°C).
- Generously season a 4 to 5-pound chuck roast with kosher salt on all sides.
- In a large Dutch oven, heat vegetable oil over medium-high heat and sear the seasoned chuck roast for about 4–5 minutes on each side.
- Remove the roast and sauté chopped sweet onion, minced garlic, and grated fresh ginger for about 5 minutes.
- Stir in gochujang paste, brown sugar, and low-sodium soy sauce or tamari, mixing well for 2–3 minutes.
- Return the roast to the pot, add beef stock to cover the meat, and simmer for about 5 minutes.
- Cover with a lid and cook in the preheated oven for approximately 2 hours.
- Once cooked, let it rest for a few minutes, then serve over steamed rice, garnished with cilantro and kimchi.
