Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Generously season a 4 to 5-pound chuck roast with kosher salt on all sides.
  3. In a large Dutch oven, heat vegetable oil over medium-high heat and sear the seasoned chuck roast for about 4–5 minutes on each side.
  4. Remove the roast and sauté chopped sweet onion, minced garlic, and grated fresh ginger for about 5 minutes.
  5. Stir in gochujang paste, brown sugar, and low-sodium soy sauce or tamari, mixing well for 2–3 minutes.
  6. Return the roast to the pot, add beef stock to cover the meat, and simmer for about 5 minutes.
  7. Cover with a lid and cook in the preheated oven for approximately 2 hours.
  8. Once cooked, let it rest for a few minutes, then serve over steamed rice, garnished with cilantro and kimchi.
