Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Chop carrots and broccoli, toss with olive oil and salt, and place on one half of the baking sheet.
  3. In a large bowl, combine ground beef, egg, breadcrumbs, minced garlic, chopped green onion, sesame oil, and soy sauce. Mix until just combined.
  4. Shape the mixture into 1.5-inch meatballs and place on the other half of the baking sheet.
  5. Bake for 20-22 minutes until meatballs are browned and firm, and vegetables are tender.
  6. In a saucepan, combine soy sauce, gochujang, honey, rice vinegar, brown sugar, and minced garlic. Simmer for 5-7 minutes until thickened.
  7. Transfer baked meatballs to a bowl and toss with the BBQ sauce until well coated.
  8. Serve the meatballs over roasted vegetables, garnished with sesame seeds and chopped green onion.
