For the Topping

For the Glaze

Method
 

Instructions
  1. In a medium bowl, combine warm water with granulated sugar. Sprinkle yeast over it and let sit for 10-15 minutes.
  2. In a large bowl, whisk together bread flour and salt. Pour in the yeast mixture and olive oil, stirring until a sticky dough forms.
  3. Cover the bowl and place in the refrigerator for at least 12 hours.
  4. Grease a baking pan, deflate the cold dough, transfer it to the pan, and cover to rise for 1.5 to 2 hours.
  5. Melt unsalted butter in a saucepan until golden brown; let cool.
  6. Combine browned butter with light brown sugar and cinnamon until dissolved.
  7. Preheat oven to 450°F. Dimple the risen dough and drizzle with topping.
  8. Bake for 20-25 minutes until golden brown.
  9. Cool for 10 minutes, then glaze with whisked powdered sugar, milk, and vanilla.

Notes

Allow focaccia to cool before icing to prevent melting. The dough is sticky; don't add flour.
