Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking sheet with nonstick cooking spray.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. Set aside.
  3. In a larger bowl, whisk melted butter and sugar until smooth, then mix in the egg, vanilla, and applesauce.
  4. Gradually stir the dry ingredients into the wet mixture until just combined. Fold in the diced apples.
  5. Scoop portions of batter onto the prepared baking sheet, leaving space between each.
