Method
 

Cooking Instructions
  1. Step 1: Heat a non-stick skillet over medium heat and add fresh chorizo, cooking for 3-5 minutes until browned.
  2. Step 2: In a medium pot, bring water to a gentle boil. Poach eggs for about 3 minutes until whites are set but yolks remain runny.
  3. Step 3: Blend egg yolks, lime juice, chipotle, and kosher salt in a blender, then gradually add hot melted butter until thickened.
  4. Step 4: Toast English muffin halves, layer chorizo, avocado, and top with poached eggs and hollandaise.
  5. Step 5: Garnish with salt, pepper, and chili powder, then serve immediately.
