Ingredients
  

For the Meatballs
  • 1 lb Ground Beef
  • 1 medium Chopped Onion
  • 1/4 cup Fresh Cilantro
  • 1 medium Jalapeño Pepper For more heat, use more peppers.
  • 2 cloves Garlic Minced.
  • 1 teaspoon Ground Cumin
  • 1 tablespoon Chili Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Crushed Tortilla Chips
  • 1 large Egg
  • 2 tablespoons Olive Oil
For the Cooking Process
  • 1 can Mexican-style Tomatoes with Green Chilies
  • 1 lime Fresh Lime Wedges For serving.

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, chopped onion, cilantro, jalapeño, minced garlic, ground cumin, chili powder, smoked paprika, salt, and pepper. Mix until well combined.
  3. Fold in the shredded cheddar cheese and crushed tortilla chips.
  4. Crack the egg into the mixture and mix until fully incorporated.
  5. Form the mixture into golf-ball-sized meatballs.
  6. Heat olive oil in an ovenproof skillet and sear the meatballs for about 5 minutes until browned.
  7. Pour the Mexican-style tomatoes with green chilies over the meatballs.
  8. Bake in the preheated oven for 15-20 minutes until internal temperature reaches 160°F (71°C).
  9. Let the meatballs rest for a few minutes before serving with fresh lime wedges.
