Step-by-Step Instructions for Chickpea Curry
  1. Heat a tablespoon of oil in a large pot over medium heat. Add chopped onion and sauté for about 5 minutes until translucent. Stir in minced garlic and grated ginger, cooking for an additional 2 minutes.
  2. Sprinkle in curry powder, cumin, and turmeric. Stir well for about 1 minute to toast the spices.
  3. Add drained chickpeas and diced tomatoes. Stir and cook for 3-4 minutes.
  4. Pour in the coconut milk and bring to a simmer. Cook uncovered for about 10 minutes until thickened.
