- In a medium mixing bowl, combine 2 cups of almond flour, 1/2 cup of maple syrup, and 1/4 cup of melted coconut oil. Mix until a smooth dough forms.
- Gently fold in 1/2 cup of vegan chocolate chips until evenly distributed throughout the dough.
- Line an 8x8 inch baking pan with parchment paper and spread the cookie dough mixture evenly across the bottom.
- Place the baking pan in the freezer and let it chill for at least 60 minutes until firm.
- Remove the baking pan and lift out the hardened bark using the parchment paper. Cut into squares or rectangles to serve.
