- In a large mixing bowl, cream together 1 cup of softened unsalted butter and 2/3 cup of granulated sugar until light and fluffy, about 3-4 minutes.

- Shape the dough into a log about 2 inches in diameter, wrap tightly in parchment paper and chill in the refrigerator for at least 30 minutes.
