  • 4 medium Potatoes starchy varieties like Russets
  • 1 cup Cheese shredded mozzarella or Trappista
  • 0.25 cup Flour all-purpose or gluten-free
  • 2 large Eggs beaten
  • Seasonings salt, pepper, paprika to taste
  • 1 cup Oil vegetable or canola for frying
For Serving
  • Dipping Sauce marinara or sour cream
  • Fresh Herbs chives or parsley for garnish

Method
 

Preparation
  1. Peel and grate the potatoes. Soak in cold water for 15 minutes.
  2. Drain and dry the potatoes using a kitchen towel.
  3. Combine grated potatoes with cheese, flour, eggs, salt, pepper, and paprika.
  4. Shape the mixture into sticks about 3 inches long and 1 inch wide.
  5. Heat oil in a skillet to 350°F (175°C) and fry the sticks until golden brown.
  6. Remove from oil and drain on paper towels.
  7. Serve warm with dipping sauces and garnish with herbs.
