Ingredients
  

For the Chicken
  • 2 pounds Boneless chicken thighs Chicken breasts can be swapped for a leaner option.
  • 1 cup Plain yogurt Greek yogurt can be used for a thicker alternative.
For the Sauce
  • 2 tablespoons Vegetable oil Any neutral oil like canola or sunflower will work.
  • 1 large Onion Add depth and sweetness.
  • 4 cloves Garlic Use fresh for the best results.
  • 1 tablespoon Ginger (grated) Fresh ginger is recommended.
For the Seasoning
  • 2 teaspoons Garam masala No substitute required.
  • 1 teaspoon Cumin No substitutions necessary.
  • ½ teaspoon Turmeric Optional, but not to be substituted.
  • 1–2 teaspoons Chili powder Adjust to taste, or use paprika for a milder flavor.
  • to taste Salt Adjust according to preference.
  • to taste Pepper Adjust according to preference.
For the Tomato and Cream Base
  • 14 oz Diced tomatoes (canned) Fresh tomatoes can be used if preferred.
  • 1 cup Heavy cream Swap in coconut milk for a dairy-free version.
For Garnish
  • to taste Fresh coriander Can be omitted if unavailable.

Method
 

Instructions
  1. Marinate the chicken in yogurt for at least 30 minutes, preferably overnight.
  2. Heat oil and sauté the chopped onions for 5-7 minutes until golden brown.
  3. Add minced garlic and grated ginger, cooking until fragrant (about 1 minute).
  4. Incorporate garam masala, cumin, turmeric, and chili powder, toast for 2 minutes.
  5. Add diced tomatoes and simmer for about 10 minutes.
  6. Stir in marinated chicken, cook for 10-15 minutes until juices run clear.
  7. Pour in heavy cream, simmer for an additional 5 minutes.
  8. Season with salt and pepper, garnish with coriander, serve hot.

Notes
