Method
 

Step 1: Prepare the Cookies
  1. Crush chocolate-covered butter cookies into fine crumbs. Combine crumbs with Irish Cream Liqueur until mixed and holding together.
Step 2: Combine the Filling Ingredients
  1. Add mascarpone cheese to the mixture and blend well until smooth, ensuring no lumps remain.
Step 3: Shape the Cheesecake Balls
  1. Form small balls from the mixture, about 1 inch in diameter, and chill in the freezer for at least 45 minutes.
Step 4: Melt the White Chocolate
  1. Set up a double boiler and melt the chopped white chocolate, stirring continuously until smooth.

  1. Remove the balls from the freezer, dip into melted white chocolate, and return to the tray. Refrigerate for one hour.
