Method
 

Step-by-Step Instructions
  1. Peel, core, and slice the apples thinly, then combine with sugar and cinnamon in a bowl.
  2. Preheat the oven to 350°F (175°C).
  3. Melt the butter and mix with crushed graham crackers, pecans, sugar, and cinnamon. Press into the pan.
  4. Beat the cream cheese and sugar until smooth, then add eggs one at a time along with the vanilla.
  5. Arrange apple slices on top of the cheesecake batter.
  6. Bake for about 70 minutes, until the edges are set and the center jiggles slightly.
  7. Melt apricot preserve and brush over apples once cheesecake cools.
  8. Chill the cheesecake for at least 5 hours, preferably overnight.
  9. Let the cheesecake sit at room temperature before serving.
