Fritter Batter

Apple Cider Glaze
  • 2 cups powdered sugar For the glaze consistency.
  • 0.33 cups apple cider or juice Opt for apple juice for less tartness.
  • 2 tbsp apple cider or juice Part of the glaze.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Lightly coat a baking sheet with nonstick cooking spray.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, kosher salt, and ground cinnamon.
  3. In a large bowl, mix melted unsalted butter and granulated sugar. Whisk in the egg, vanilla extract, and applesauce until smooth.
  4. Fold the dry ingredients into the wet mixture until just combined, then fold in the diced apples.
  5. Using a tablespoon, scoop the batter and drop onto the prepared baking sheet.
  6. Bake in the preheated oven for about 10 minutes or until lightly golden.
  7. While baking, whisk together the powdered sugar and apple cider until smooth.
  8. After 10 minutes of baking, brush the glaze over the warm fritter bites and broil for an additional 2–4 minutes.
  9. Remove from oven, brush with any remaining glaze, and allow to cool for about 15 minutes before serving.
