Step-by-Step Instructions
  1. Heat a large skillet over medium heat for 2-3 minutes to ensure an even cooking surface.
  2. Add the seasoned chicken and sear for 3-4 minutes per side until golden brown and cooked through.
  3. Remove the chicken from the pan and set aside to rest.
  4. In the same skillet, add uncooked rice and toast it for 1-2 minutes, stirring frequently.
  5. Pour in the chicken broth, then add BBQ sauce and honey. Stir well to combine.
  6. Return the seared chicken to the skillet, nestling it into the rice mixture.
  7. Bring to a gentle boil, then reduce heat to low, cover, and cook for 15 minutes.
  8. Sprinkle mixed vegetables on top, cover again, and cook for an additional 5 minutes.
  9. Remove from heat, let rest for 5 minutes, fluff the rice and serve garnished with green onions or parsley.
