  • 1 pound ground beef or ground turkey/chicken for a leaner option
  • 1 cup chopped onion choose yellow, red or white
  • 1 cup sweet peppers any variety
  • 2 cups diced red potatoes skin on for texture
  • 1 cup corn frozen or fresh
  • 1 can kidney beans or black beans, optional
  • 1 can diced tomatoes with green chilies do not drain
  • 1 can diced tomatoes do not drain
  • 1 teaspoon black pepper to taste
  • 1 teaspoon salt to taste
  • 2 cloves minced garlic fresh preferred
  • 1 teaspoon chili powder adjust for spice tolerance
  • 2 teaspoons Worcestershire sauce for savoriness
  • to taste cayenne or hot sauce optional
  • 1 cup liquid (water or broth) optional for thickness
  • 1 to 2 cups shredded cheese for topping

Method
 

Step-by-Step Instructions
  1. In a skillet over medium heat, brown the meat with onion and sweet peppers for 5–7 minutes. Drain excess fat and transfer to the Crock Pot.
  2. Layer the diced potatoes at the bottom of the Crock Pot. Spread corn on top.
  3. Add the browned meat mixture evenly over the corn.
  4. Mix tomatoes, water or broth, Worcestershire sauce, chili powder, garlic, salt, and pepper in a bowl. Pour over the layered ingredients.
  5. Cover and cook on high for 4 hours or on low for 6 hours until potatoes are tender.
  6. In the last 10 minutes, add shredded cheese on top, cover and allow to melt.
