Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and optional seasonings.
  3. Add the cold, cubed unsalted butter to your dry ingredients and rub in until it resembles coarse crumbs.
  4. Pour in the cold buttermilk and mix gently until just moistened.
  5. Turn the dough out onto a floured surface and shape it into a rectangle about ½ inch thick.
  6. Flatten the dough slightly, fold into thirds, and rotate 90 degrees; repeat this process 2-3 times.
  7. Roll out the dough to about ½ inch thick, and cut out circles using a round cutter.
  8. Layer cheese and ham between two rounds of biscuit dough, sealing the edges well.
  9. Brush the tops of the biscuits with the egg wash for a golden-brown finish.
  10. Bake for 15-18 minutes until puffy and golden brown.
