Ingredients
  

For the Shrimp
  • 1 pound Shrimp, tail-off
  • 2 tablespoons Olive Oil can swap for avocado oil
  • 1 teaspoon Smoked Paprika use regular paprika for milder flavor
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • to taste Salt
  • to taste Pepper
For the Asparagus
  • 1 bunch Asparagus or substitute with bell peppers or zucchini
For the Base
  • 1 cup Quinoa or Rice or couscous, bulgur, cauliflower rice
For the Creamy Garlic Sauce
  • 1 cup Greek Yogurt can swap with sour cream
  • 2 cloves Minced Garlic adjust according to preference
  • 1 tablespoon Lemon Juice tweak to taste
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Marinate the shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper for 15-20 minutes.
  2. Preheat the grill to around 400°F (200°C).
  3. Drizzle asparagus with olive oil and season with salt and pepper.
  4. Grill the asparagus for 4-5 minutes until tender.
  5. Grill the marinated shrimp for 2-3 minutes on each side until pink and opaque.
  6. Prepare the creamy garlic sauce by mixing Greek yogurt, mayonnaise, garlic, lemon juice, salt, and pepper.
  7. Assemble the bowl with quinoa or rice, grilled asparagus, grilled shrimp, and drizzle with sauce.
  8. Garnish with freshly chopped parsley and serve immediately.
