- Preheat your grill to medium heat (around 350°F/175°C) and brush the grill grates with canola oil.
- Slice Honeycrisp apples into 24 thin, even slices, about 1/4 inch thick.
- Toss apple slices with olive oil, kosher salt, and ground black pepper in a large bowl.
- Grill apple slices for 2-3 minutes on each side until grill marks appear and apples soften slightly.
- Arrange grilled apple slices on a serving platter.
- Top with prosciutto, crumbled goat cheese, chopped pistachios, and thyme.
- Drizzle pure honey over the top before serving.
