Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients.
  2. In an oven-safe skillet over medium-high heat, pour olive oil and brown the chicken for about 5-6 minutes.
  3. Sauté chopped onion in the same skillet until translucent, about 2-3 minutes. Add garlic, red bell pepper, and zucchini, cooking for another 3-4 minutes.
  4. Stir in spinach, oregano, thyme, and red pepper flakes, cooking until spinach wilts, about 1-2 minutes.
  5. Add orzo pasta, chicken broth, and lemon juice, stirring to combine.
  6. Return chicken to the skillet, nestling it among the orzo and vegetables. Cover and place in the oven.
  7. Bake for 25-30 minutes until orzo is tender and chicken is cooked through.
  8. Remove from oven, sprinkle with feta cheese, parsley, and olives. Bake uncovered for an additional 5 minutes.
  9. Serve warm, pairing with Greek salads or tzatziki.
