- Preheat your oven to 350°F (175°C).
- Melt 4 tablespoons of unsalted butter over medium heat in a large saucepan.
- Add 10 ounces of mini marshmallows to the butter and stir until melted and smooth.
- Stir in 1 teaspoon of ground ginger, 1 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1/4 cup of molasses.
- Add 6 cups of Rice Krispies cereal and gently fold until evenly coated.
- Grease a 9x13-inch baking dish and pour the mixture in, pressing down to create a smooth surface.
- Allow to cool at room temperature for at least 30 minutes.
- Melt 1 cup of white chocolate chips and drizzle over cooled treats, optionally adding crushed gingerbread cookies.
- Cut into squares or rectangles and serve.
