Cozy Fluffy Pumpkin Pancakes
  1. In a large mixing bowl, whisk together 1 cup of all-purpose flour, 2 teaspoons of baking powder, 2 tablespoons of brown sugar, 1/4 teaspoon of salt, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of pumpkin pie spice until well blended.
  2. In a separate bowl, blend 1 cup of buttermilk (or whole milk), 1/2 cup of pumpkin puree, 2 large eggs, and 1 teaspoon of vanilla extract until fully combined and smooth.
